Sweet & Naughty Palmer

Although it’s September, it is still hot and here’s the perfect cocktail to enjoy during these last days of summer.  This recipe is inspired by a yummy concoction I enjoyed at a local restaurant.  I set out to make a version of my own.  Like any good southerner, it’s a little sweet, a little naughty and 100% fabulous.

Here’s the recipe for one drink:

8 oz. of Lemonade Slush  (recipe below)
2 oz. of Sweet Tea Vodka (I like Deep Eddy or Firefly)
1 oz. of Peach Schnapps

Recipe for Lemonade Slush: (This will make a pitcher full or use the short cut below.) 

Classic Lemonade with  a bit less water:

2 cups chilled simple syrup (boil 1 1/2 cups sugar with 1 1/2 cups of water, let cool)
2 1/2 cups of  fresh lemon juice (about 15 lemons)
1  cup ice cold water (You would add another cup of water, if you wanted to make classic lemonade rather than the slushy, but since there is so much ice being added it compensates for the water.)

Combine the lemonade with nearly an equal amount of ice in a blender to make it super slushy.

Short Cut: If you’re pressed for time and can’t make the classic lemonade in advance because of the time required to cool the simple syrup, then you can always use a short cut and purchase Simply Lemonade or frozen Lemonade concentrate and blend it with ice. (Personally, I like the Lemonade concentrate.)


One more note:  The classic lemonade recipe is also delicious served over ice.  We use the recipe for my kiddo’s lemonade stand.  Here’s Finn’s lemonade stand we made this past summer out of old barn wood, 2×4’s and a gazzillion deck screws.
