Roasted Brussels Sprouts

A great way to Eat Your Brussel Sprouts!  It seems like either you love brussels sprouts or you hate them. My husband happens to love them.  This quick and easy recipe is a great way to bring brussels sprouts to your table.

Ingredients:

12-15 fresh brussels sprouts, sliced and quartered (cut the ends off)
2 Tbs. of light olive oil
1 teaspoon of red wine vinegar
2 slices of raw bacon, diced or chopped
Salt and Pepper

Note: For extra yumminess, peel and dice one sweet potato and add to the mixture before popping it in the oven. It lends a little sweetness to the dish.  I love it, but my husband prefers his without the sweet potato.

Directions:

Heat oven to 425 degrees.

Line a baking sheet with parchment paper.  Pour the brussels sprouts on the parchment lined baking sheet. Combine olive oil and red wine vinegar in a small bowl and pour over the brussels sprouts, toss until coated.  Sprinkle raw diced bacon over the brussels sprouts and then generously sprinkle salt and pepper over everything.

Bake for 20 to 25 minutes.  Toss the brussels sprouts mixture about half-way through cooking.
