If you are like me, you are always looking for weeknight meal ideas. I thought I’d share my son’s favorite meatball recipe. Like most kids (and big kids) he loves pasta and meatballs. This version is easy and tasty. And what’s better than, easy and tasty?
2 lbs. of ground beef (I use 80/20)
2 teaspoons of minced garlic
1 Tbs. of Italian Seasoning
1 1/2 Tbs. of minced onion flakes
1 cup Parmesan cheese, grated or finely shredded
1 cup of Italian breadcrumbs
1 Tbs. of Worcestershire sauce
1 Tbs. of balsamic vinegar
1 Tbs. of olive oil
salt and pepper
Cover meatballs with: a 24 oz. jar of your favorite marinara
Preheat oven to 400 degrees.
Combine breadcrumbs, italian seasoning and parmesan cheese in a bowl.
Combine all other ingredients in a large bowl, except for the parmesan cheese, italian seasoning and breadcrumbs, and mix until combined, but don’t over mix. Now add the breadcrumb and cheese mixture to the meat mixture… just until incorporated.
Make your meatballs. I like making jumbo meat balls- this will make about 14 big meatballs or about 22-24 regular (appetizer) sized meatballs.
At this point you could pan sear the meatballs, but I skip the step and place them in a greased 9×13 baking dish. Pour the jar of marinara sauce over the meatballs.
Bake at 400 degrees for 45 minutes.
Serve with your favorite pasta.
Note: This recipe can also be used for an italian meatloaf. If it’s made into a loaf, I bake at 350 degrees for 75 minutes.
