During the summer, I like quick-easy-meals. I've got to tend to my kiddo and the gardens, so there's little time to spend in the kitchen. That's why I love this easy side. Honestly, I love anything that I can throw on a cookie sheet and toss in the oven.

The beauty of a Caprese Salad is that most of the ingredients can be grown in your own backyard.
