Caprese Salad

The beauty of a Caprese Salad is that most of the ingredients can be grown in your own backyard.  During the summer months, there is nothing better than picking a ripe tomato and fresh basil from the garden to enjoy with delicious Mozzarella cheese.  This is a two-minute salad.  Right now, I’m asking myself, “Why don’t I make this more often?”

Seems silly to list the ingredients, but here they are:

Fresh tomato
Fresh basil
Fresh Mozzerella Cheese, sliced
Olive oil 
And a generous drizzle of Balsamic Glaze  (For a Short Cut: I like Bertolli’s Balsamic Glaze)

To make your own balsamic glaze:

Reduce a cup of balsamic vinegar with 1/2 cup of brown sugar, by heating to a gently boil and then reducing heat to low and simmering until the mixture is thick enough to coat the back of a spoon.
